Idyllically situated up on the hill behind from the hubbub of Marbella’s La Cañada shopping centre, sits the enchanting Nueva Kaskada restaurant where east really does meet west.  

This restaurant offers an all-year round dining experience with indoor and outdoor dining. Over the summer months there is the huge outside patio area looking out to the Mediterranean Sea surrounded by established vegetation. The terrace is covered by elegant shade sails making a truly wonderful al fresco dining experience. Over the winter months the large indoor dining area offers a cosy fireplace and a bodega splendidly lit up with their trademark purple lighting.

Nueva Kaskada’s German chef, Ewald Fichthaler brings a wealth of experience from around the world following years of working in countries such as Switzerland, the United Kingdom, Tokyo, Shanghai, Singapore and Yokohama. He has worked alongside Michelin star chefs such as Anton Mosimann in London’s Dorchester Hotel serving royalty and superstars such as Lady Diana and Michael Jackson. He also worked with Andre Jaeger, current owner of the Rheinhotel Fischerzunft, which is part of the Grand Chef Relais & Châteaux group.

After so many years of living and working in the Far East, Ewald returned to Europe inspired by his culinary travels. Since arriving here on the Costa del Sol 11 years ago, Ewald has worked in a number of prestigious restaurants across the coast, finally holding the position of Culinary Director of Nueva Kaskada, exuding his enthusiasm for Asian cooking through his very carefully thought-out menu. He has earned himself an impressive loyal fan-base of diners who regularly visit Nueva Kaskada, but he is always excited to welcome new diners to taste his creations. He is quirky, passionate, and unlike many chefs, totally unassuming but at the same time charming. He changes his menu seasonally according to what produce is available at the time from the markets that he regularly loves to visit.

Home & Lifestyle Magazine was lucky enough to be invited to sample some of Ewald’s many delights, one of them being his signature dish entitled “Yang” consisting of a crispy Asian-style spring chicken (or poulard) served with Singapore noodles combining crunchy and soft textures with salty and sweet flavours. We were also treated to a clever twist on the traditional Beef Wellington. Instead of the beef fillet being wrapped inside puff pastry, the ingredients were arranged in a tower with the pastry delicately placed on the top of a layer of melt-in-the-mouth foie gras, a succulent beef fillet and a delicate potato purée base surrounded by crunchy vegetables and a port wine jus. Amongst many, a dish that put a smile on our faces was the fillet of turbot Mona Lisa (please excuse the pun). Ewald profoundly commented, “I called it the Mona Lisa because the arrangement of the dish reminded me of the painting. If you love something, you give it a name, so that’s why I like to give my dishes names – they are a creation and I want to give them a personality of their own.”

Nueva Kaskada is ideal for parties, weddings or a romantic meal. Open every day for dinner except for Tuesdays and open for lunch on Fridays, Saturdays and Sundays.
